Home Made

I was in the mood for some hot chocolate. I don't usually drink it for it is too sweet. However, I had some at my mother's house the other night that was a dark chocolate mix. Still sweet, but it hit the spot. I kept wanting to make some myself. I also wanted whip cream on it, but not the fake stuff.
So.... I bought whipping cream (I've only made this once in my life). I bought whole milk (I've been reading that all the low-fat stuff is not good for us anyway) ... and I LIKE whole milk. I made the whip cream using half the sugar it called for and set it aside. Then I cut up a block of dark chocolate (semi-sweet baking chocolate). I put the chocolate into a pot with about 2 tablespoons of water and 1 teaspoon of honey and stirred until it melted over medium heat. I added 2 cups of milk and got it hot.
Taking down two pretty clear glass mugs from the cupboard, I filled each with hot-chocolate and topped it with whip cream. Yummm.
We sat down to enjoy it. The first two sips were very good. Then, I reached for a napkin and dumped mine in my lap! :)

BTW, the secret to making good whip cream is having the ream, glass bowl and beaters cold.

Fit for Life

I wrote this item before I started working, but did not get it posted. Here it is now.

I am not saying for you to go buy their book or join their weight –loss plan. I want to give you my ‘testimony’ of how I discovered Fit-for-life and how it has helped me. I have had digestive problems since I was a kid. My mama told me a story today about when I was 3 years old and was constipated. It was a cute story. When I heard it, I realized I’d had the problems since I was 3!


While I lived in Germany, some of my friends were on the Fit-for-Life way of eating to lose weight and feel better. They suggested I do so. I had tried many different types of diets to help me control the ten-fifteen pounds I deal with most of the time. (I figure if I can keep that off, then maybe I won’t gain way much more than I want to gain.) I did not want to try another diet or read another book on healthy stuff, so I just smiled.

Then, one day I was in a thrift store looking at books. On a shelf, all by itself lay a Fit-for-Life book, with the title facing me. Now, I looked at that book, and thought maybe God wanted me to read it, so I chose it. As I read it, I realized a lot of it talked about the same issues that I had heard a speaker talk about only a few months earlier.

I have followed the FFL way of eating for about 5 years now, most of the time. It is hard to do so when we eat out or have church dinners, eat with friends, etc. But, I figure if we do so at home, when those events happen, then that is our splurge-times. We just have to balance the splurges.  When I eat FFL, I do feel better and don’t battle with my digestive problems as much.

MUFA foods

Olives and olive oil
Nuts and nut oils
Seeds and seed oils
Avocados
Chocolate (Dark)


MUFA is short for monounsaturated fat, a good fat. It is supposed to help reduce LDL (bad) cholesterol and raise HDL (good) cholesterol.

They say (right now) these foods are good for you. If you want to do a search, you can see why. As with all things, everyone does not agree.
We try to work at least one with each meal. We have a mixture of ground flaxseed, chopped walnuts and cinnamon we use on our cereal and in our cookies. I use ground flaxseed in most of my baked goods. I call my biscuits 'Southern Biscuits' because they have freckles.
Well, anyway that is why we call chocolate covered nuts, MUFA-MUFA.

Spring Vegetables Recipe

A dish I made yesterday. I got it from Woman's Day Magazine and it is on their web site. I forgot to take a photo, and did not know if I should copy theirs and use it.

Mine looked a little different, because I thought I had frozen peas in the freezer so did not buy any. What I had was brussel sprouts! But, the photo on the back was small so it looked like peas. So, I used peas and snaps from my mother's garden that I had in the freezer. It worked. I still want to try it again with frozen peas. We had it with baked chicken. Yum. A Fit for Life meal.
