My birthday cake. Long time ago and far far away, I used to make a cherry cheesecake for my birthday every year for many years. Then, I got out of it for various reasons. Eating less sugar, gluten free ....
But, this year I wanted to have one with a crust I could eat.
So, I made a crust with pecan flour & GF graham crackers. While I was at it I figured I should go for less sugar, so I did that too. Licking the beaters was sweet enough, so I am looking forward to having some with a cup of coffee this afternoon!
